Ingredients

  • 1 c. butter
  • 1 c. packed brown sugar
  • 8 oz. chopped dates
  • 1 egg
  • 1 Tbsp. vanilla
  • 3 c. Rice Krispies
  • 1 c. flaked coconut
  • 1/2 c. candied cherries
  • 2 1/2 c. flaked coconut

Method

  • In a large 10-inch pan, melt butter; stir in sugar and dates. Remove from heat and add egg; beat and return to heat and continue cooking over a medium heat and stirring constantly, until mixture starts to boil.
  • Remove from heat and add remaining ingredients except the 2 1/2 cups of coconut.
  • Stir well and let stand about 20 minutes.
  • You may cool in refrigerator.
  • Roll into balls and roll in coconut.
  • Great for the holidays.
  • May be frozen and used at a later date.
  • Makes 4 to 5 dozen.
