Ingredients

  • 2 medium eggplant, peeled, chopped and boiled until tender
  • 1 lb. lean ground beef
  • 1 can Ro-Tel tomatoes
  • 1/2 c. chopped onions
  • 1/2 c. chopped celery
  • 1 c. chopped bell pepper
  • 1 clove garlic, chopped
  • 1 Tbsp. olive oil
  • 2 to 3 c. cooked rice
  • onions tops and parsley to taste
  • seasoning to taste

Method

  • Heat olive oil in pot until hot.
  • Brown ground beef.
  • Add seasonings and cook about 10 minutes.
  • Add Ro-Tel and cook five minutes.
  • Add boiled eggplant and about 1 1/2 cups of water.
  • Cook on low fire for about 1 hour.
