- 2 medium eggplant, peeled, chopped and boiled until tender
- 1 lb. lean ground beef
- 1 can Ro-Tel tomatoes
- 1/2 c. chopped onions
- 1/2 c. chopped celery
- 1 c. chopped bell pepper
- 1 clove garlic, chopped
- 1 Tbsp. olive oil
- 2 to 3 c. cooked rice
- onions tops and parsley to taste
- seasoning to taste
Method
- Heat olive oil in pot until hot.
- Brown ground beef.
- Add seasonings and cook about 10 minutes.
- Add Ro-Tel and cook five minutes.
- Add boiled eggplant and about 1 1/2 cups of water.
- Cook on low fire for about 1 hour.
