Ingredients

  • 1 c. shortening
  • 1 c. sugar
  • 1 c. molasses
  • 1/2 tsp. salt
  • 2 beaten eggs
  • flour to stiffen (about 4 c.)
  • 1 Tbsp. ginger
  • 1 Tbsp. cinnamon
  • 1 Tbsp. cloves
  • 1 tsp. soda, mixed with 1 Tbsp. vinegar

Method

  • In saucepan, bring shortening, sugar, molasses and salt to a slow boil until sugar melts.
  • Cool.
  • Add eggs after mixture cools. Add flour, spices and soda/vinegar mix.
  • Dough will be stiff. Roll out very thin (about 1/8-inch thickness).
  • If dough sticks, add small amounts of flour to board, pin or hands to keep from sticking.
  • Bake at 350° about 7 to 8 minutes.
  • Cookies should be very thin and crispy.
  • Flavor will improve as they are stored in tins.
