Ingredients
- 1 c. shortening
- 1 c. sugar
- 1 c. molasses
- 1/2 tsp. salt
- 2 beaten eggs
- flour to stiffen (about 4 c.)
- 1 Tbsp. ginger
- 1 Tbsp. cinnamon
- 1 Tbsp. cloves
- 1 tsp. soda, mixed with 1 Tbsp. vinegar
Method
- In saucepan, bring shortening, sugar, molasses and salt to a slow boil until sugar melts.
- Cool.
- Add eggs after mixture cools. Add flour, spices and soda/vinegar mix.
- Dough will be stiff. Roll out very thin (about 1/8-inch thickness).
- If dough sticks, add small amounts of flour to board, pin or hands to keep from sticking.
- Bake at 350° about 7 to 8 minutes.
- Cookies should be very thin and crispy.
- Flavor will improve as they are stored in tins.
