Ingredients

  • 1 None egg white
  • 1/4 cup sugar
  • 2/3 cup flaked coconut
  • 2 tbsp each finely chopped glace apricots, glace pineapple, glace red cherries and glace green cherries
  • 2 tbsp finely chopped roasted, unsalted pistachios

Method

  • Preheat the oven to 300°F. Line two 12-cup mini muffin pans with paper liners.
  • Beat egg white in a medium bowl with electric mixer until soft peaks form. Gradually add sugar, beating until sugar has dissolved. Fold in coconut and half the combined fruit and nuts. Divide mixture among muffin cups. Sprinkle with remaining fruit and nut mixture.
  • Bake for 20 mins. Cool in pans on wire rack.
