- 140 g oat flour
- 140 g corn flour
- 80 g sultanas
- 150 g dried pitted dates
- 1/2 teaspoon Ceylon cinnamon
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons baking soda
- 120 milliliters raw olive oil
- 70 g coconut sugar
- 3 free range eggs
- 3 apples
- 1/2 teaspoon vanilla powder
- 1/2 sea Salt
- Zest of 1 lemon
- butter to grease the tin
Method
- Boil sultanas and dates for 5 min in water, strain and blent till smooth and unique paste.
- Peel and slice apples.
- Mix all the dry ingredients.
- Beat the eggs and mix into the dry ingredients. Add Sultanas,dates paste and lemon zest. Stir carefully.
- Bake for 20 min @ 180°. Do not try it warm. Let it cool for at least 2 hours. My very personal but I think important advice:) Baking this pie for the next day consumption is ideal. Enjoy!
