Ingredients

  • 140 g oat flour
  • 140 g corn flour
  • 80 g sultanas
  • 150 g dried pitted dates
  • 1/2 teaspoon Ceylon cinnamon
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 120 milliliters raw olive oil
  • 70 g coconut sugar
  • 3 free range eggs
  • 3 apples
  • 1/2 teaspoon vanilla powder
  • 1/2 sea Salt
  • Zest of 1 lemon
  • butter to grease the tin

Method

  • Boil sultanas and dates for 5 min in water, strain and blent till smooth and unique paste.
  • Peel and slice apples.
  • Mix all the dry ingredients.
  • Beat the eggs and mix into the dry ingredients. Add Sultanas,dates paste and lemon zest. Stir carefully.
  • Bake for 20 min @ 180°. Do not try it warm. Let it cool for at least 2 hours. My very personal but I think important advice:) Baking this pie for the next day consumption is ideal. Enjoy!
