Ingredients

  • 2 or 3 apples, diced
  • 2 or 3 carrots, grated
  • 2 c. pineapple (chunks or crushed), drained (reserve juice)
  • 1/2 to 1 c. raisins
  • 1/2 c. nuts or sunflower seeds (optional)

Method

  • Prepare fruit and vegetables.
  • Mix all ingredients in a bowl. Add some pineapple juice, if desired.
  • Mix well.
  • Chill in refrigerator for 2 hours.
  • Serves 6 to 8, as fruit cup, salad for light snack or dessert.
  • Very colorful and easy salad.
