Ingredients
- 2 or 3 apples, diced
- 2 or 3 carrots, grated
- 2 c. pineapple (chunks or crushed), drained (reserve juice)
- 1/2 to 1 c. raisins
- 1/2 c. nuts or sunflower seeds (optional)
Method
- Prepare fruit and vegetables.
- Mix all ingredients in a bowl. Add some pineapple juice, if desired.
- Mix well.
- Chill in refrigerator for 2 hours.
- Serves 6 to 8, as fruit cup, salad for light snack or dessert.
- Very colorful and easy salad.
