Ingredients

  • 4 c. apples, peeled and chopped
  • 1 3/4 c. sugar
  • 2 eggs
  • 1/3 c. oil
  • 2 tsp. vanilla
  • 1 1/2 Tbsp. lemon juice
  • 1 Tbsp. light corn syrup
  • 2 c. flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 c. walnuts, chopped
  • 1 c. powdered sugar
  • 1/2 tsp. vanilla

Method

  • Combine apples and sugar.
  • Set aside.
  • In a large bowl, mix eggs, oil, and vanilla.
  • Beat 1 minute on medium speed.
  • Combine dry ingredients, except walnuts.
  • Add alternately with apple mixture to egg mixture.
  • Finally, add walnuts.
  • Pour into greased 9 inch x 13 inch pan and bake at 350° for 45 to 50 minutes. Combine powdered sugar, lemon juice, vanilla, and corn syrup. Drizzle over cooled cake.
