- 1/4 c. butter or margarine
- 1 broiler-fryer, cut up
- 1 medium onion, chopped
- 1/2 lb. fresh mushrooms
- 1 can condensed cream of mushroom soup
- 3/4 c. dry sherry
- 1 Tbsp. chopped parsley
- 1 tsp. salt
- 1 tsp. paprika
- ground fresh pepper
- 1 or 2 lemon slices
Method
- Heat oven to 350°.
- Melt butter in a large skillet over medium heat.
- Brown chicken slowly.
- Place in shallow baking dish.
- Add onion and mushrooms; cook until limp.
- Mix remaining ingredients, pouring over chicken.
- Bake 1 hour.
- Serves 4.
