Ingredients

  • 1 lb Warm and/or possibly sweet Italian sausages
  • 2 Tbsp. Butter or possibly margarine
  • 2 lrg Red onions, coarsely minced
  • 1 bn Scallions,, sliced
  • 1/3 c. Balsamic vinegar
  • 1/2 c. Imported pitted black olives
  • 4 Tbsp. Fresh minced sage Or possibly 4 teaspoon dry,, divided
  • 1 lb Penne pasta
  • 3 x Large eggs
  • 1 c. Grated Parmesan cheese
  • 1/2 c. Half and half
  • 1/2 tsp Pepper

Method

  • Preheat oven to 400.
  • In skillet, place sausages and 1/4 c. water.
  • Bring to simmer over medium heat; cover and cook 10 min.
  • Uncover; throw away liquid and cook 15 min, turning till cooked through.
  • Drain on paper towels.
  • Heat butter in same skillet over medium heat, add in onions and cook, stirring occasionally, 20 min.
  • Add in scallions, vinegar, olives and 2 Tbsp.
  • sage; cook 8 min.
  • Meanwhile, prepare pasta as package directs.
  • Cold slightly and toss with Large eggs, cheese, remaining 2 Tbsp.
  • sage,half and half and pepper.
  • Place in greased 2-qt casserole.
  • Bake 15-20 min till pasta shell is set and lightly browned.
  • Slice sausages; add in to onions and season with salt and pepper to taste.
  • Spoon into pasta shell.
