Ingredients

  • 2-1/2 cups Old Fashioned Oats
  • 1/4 cups Flax Seed Meal
  • 1/4 cups Brown Sugar
  • 1-1/2 Tablespoon Cinnamon
  • 1/2 teaspoons Nutmeg
  • 1/2 teaspoons Allspice
  • 2 dashes Ginger
  • 1/2 teaspoons Salt
  • 1 teaspoon Baking Powder
  • 2 cups Milk
  • 2 whole Eggs
  • 2 Tablespoons Coconut Oil, Melted (or Butter)
  • 2 Tablespoons Honey
  • 1 teaspoon Vanilla
  • 2 cups Peaches, Chopped (about 2 Large Peaches)
  • 1/2 cups Chopped Walnuts, Pecans, Or Other Nut

Method

  • Preheat oven to 375°F and spray an 8x8 baking dish with nonstick cooking spray.
  • In a large bowl combine all ingredients and stir well.
  • Pour oatmeal mixture into prepared baking dish and bake for 35 minutes, or until the edges begin to pull away from the dish and the top is lightly browned. Let sit for 5 minutes then serve. Great reheated the next day with milk and a handful of blueberries!
