Ingredients
- 4 to 6 split chicken breasts or 1 cut up chicken
- 1/2 c. chopped celery
- 1 medium onion, chopped
- 1/4 c. parsley (fresh or dried)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1 can cream of celery soup with 1/2 c. milk
- 1/2 c. sliced almonds
Method
- Wash chicken parts and cut away excess fat and skin.
- Place in a large Pyrex baking dish, as bottom layer.
- Combine all remaining ingredients except almonds and cover all the chicken with this sauce.
- Bake for 1 hour at 350°.
- In the last 15 minutes, sprinkle on the sliced almonds.
- Add 1/4 cup bread crumbs, if desired. Return all to oven for 15 minutes more, until light brown.
