Ingredients

  • 1 1/4 c. sugar
  • 1/2 c. shortening
  • 2 eggs
  • 1 tsp. salt
  • 2 1/2 c. flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/3 c. bananas, mashed
  • 1/3 c. milk
  • 1 tsp. vanilla

Method

  • Mix sugar and shortening until smooth. Beat in eggs. In a separate bowl, combine salt, flour, baking powder and baking soda. Gradually add dry mix to wet mix, alternating with milk.
  • Mix in bananas and then vanilla. Pour into a greased 13 x 9-inch pan. Bake at 325° for 30 to 35 minutes.
  • Toothpick test.
