Ingredients
- 5 oz pecans
- 2 None large ripe bananas
- 6 None egg whites, lightly whisked
- 3/4 cup unsalted butter, melted, cooled
- 1 1/2 cups powdered sugar
- 1/2 cup all-purpose flour
- 1/3 cup maple syrup
- 1 tsp ground cinnamon
Method
- Preheat oven to 350°F. Grease a 12-hole friand or muffin pan and place on a baking sheet.
- Place pecans in a food processor and process to fine crumbs. Transfer to a bowl. Mash one banana in a bowl and add to ground pecans along with egg white, butter, powdered sugar, flour, 2 tbsp of maple syrup and cinnamon. Mix well.
- Spoon banana mixture into pans. Thinly slice remaining banana and arrange on top.
- Bake for 20 mins until golden and a skewer inserted into center comes out clean. Let cool in pan 5 mins before transferring to a wire rack to cool completely. Drizzle with remaining maple syrup.
