Ingredients

  • 1 3/4 pounds ground beef
  • 1 small onions finely chopped
  • 4 slices bacon cooked, drained and chopped
  • 2 cloves garlic minced
  • 1 large eggs lightly beaten
  • 1/2 cup bread crumbs fresh
  • 2 tablespoons chives fresh, finely chopped
  • 1/2 cup barbecue sauce
  • 2 tablespoons tomato sauce

Method

  • Preheat oven to 375F (190C).
  • Grease an 8-hole, 3/4 cup-capacity, mini loaf pan.
  • Combine ground beef, onion, bacon, garlic, egg, breadcrumbs, chives and 2 tablespoons barbecue sauce in a bowl.
  • Season with salt and pepper.
  • Press mixture into prepared pan holes.
  • Bake for 15 minutes (they won't be fully cooked at this point).
  • Meanwhile, line a large baking tray with foil.
  • Combine tomato sauce and remaining barbecue sauce in a bowl.
  • Turn the mini-meatloaves out onto prepared baking pan.
  • Brush with sauce mixture.
  • Bake for 5 to 7 minutes or until browned and cooked through.
  • Serve with garlic mashed potatoes.
