Ingredients

  • 3/4 cup mayonnaise
  • 2 tsp finely grated lemon peel
  • 1/4 tsp cracked black pepper
  • 1 tsp lemon juice
  • 3/4 cup self-rising flour
  • 3/4 cup flour
  • 1 tsp Chinese five-spice powder
  • 1 None egg
  • 1 1/2 cups beer
  • None None Vegetable oil, for deep-frying
  • 1 1/3 lbs white fish fillets
  • None None Lemon wedges, to serve

Method

  • Combine mayonnaise, lemon peel and juice, and pepper in small bowl.
  • Whisk flours, five-spice, egg and beer in medium bowl until smooth.
  • Fill a large saucepan or deep fryer one-third full with vegetable oil; heat to 350°C (or until a cube of bread turns golden in 10 seconds). Dip fish in batter; draining off excess. Deep-fry fish, in batches, until cooked through. Drain on paper towels. Serve with mayonnaise and lemon wedges, if desired.
