Ingredients
- 1/2 lb. lentils
- 6 c. water
- 2 carrots, chopped or sliced
- 1 clove garlic, crushed
- 1 1/2 c. tomato juice
- 1/2 c. minced parsley
- 1 Tbsp. margarine
- 1 1/2 tsp. salt
- dash of pepper
- 1/2 tsp. dried oregano
Method
- Combine in kettle lentils and water.
- Cook 30 minutes or until lentils are tender.
- Add the rest of the ingredients.
- Bring to a boil, reduce heat and simmer just until carrots are tender.
- Check seasonings and serve.
- Serves 6. Recipe can be doubled and freezes well.
