- 3 cans black-eyed peas, drained or 16 oz. dry peas, cooked
- 1/2 c. cider vinegar
- 1/3 c. olive oil
- 2 tsp. sugar
- 1/4 tsp. ground red pepper
- 1 Tbsp. salt
- 1/2 c. chopped parsley
- 1 clove garlic, minced
- 2 celery stalks, thinly chopped
- 3 green onions, minced (use blades too)
Method
- Mix oil, vinegar and seasonings well.
- Mix all other ingredients and pour seasonings over.
- Mix well.
- Refrigerate 2 hours.
