Ingredients

  • 3 1/2 c. flour
  • 1 tsp. ground cinnamon
  • 3 c. whole bran cereal (Bran Buds)
  • 2 eggs
  • 1 (8 oz.) can (1 c.) applesauce
  • 1/2 c. packed brown sugar
  • 1/2 c. butter or margarine
  • 1 c. sugar
  • 1/3 c. butter or margarine
  • 1 c. buttermilk
  • 2 1/2 tsp. baking soda

Method

  • Combine 1 cup flour, brown sugar and cinnamon.
  • Cut in 1/2 cup butter.
  • Combine 1 cup cereal with 1 cup boiling water; set aside. Cream the granulated sugar and 1/3 cup butter.
  • Beat in eggs. Mix in milk, applesauce and softened bran.
  • Combine the remaining flour, soda and 1/2 teaspoon salt.
  • Add the remaining cereal and egg mixture; blend well.
  • Pour into two greased 9 x 9 x 2-inch baking pans.
  • Sprinkle half of the cinnamon mixture atop each. Bake at 400° for 30 to 35 minutes.
