Ingredients

  • 1 bunch broccoli, cut in bite size pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. dry mustard
  • 1 1/2 c. grated Cheddar cheese
  • 2 c. chicken broth
  • 1/2 c. margarine
  • 1/2 c. flour
  • 1 tsp. salt
  • 3 c. milk

Method

  • Melt margarine in
  • 3-quart
  • saucepan.
  • Saute
  • broccoli, onion and garlic until tender.
  • Blend
  • in
  • flour,
  • mustard and salt. Gradually add milk and broth and cook over medium heat, stirring constantly, until thickened.
  • Reduce
  • heat to low and blend in cheese, stirring until smooth.
  • Do not let this boil. Makes 1 1/2 quarts.
