Ingredients

  • 3 egg whites, room temperature
  • 18 teaspoon salt
  • 14 teaspoon cream of tartar
  • 34 cup granulated sugar
  • 34 cup chocolate wafer crumbs
  • 12 cup chopped pecans or 12 cup walnuts
  • 12 teaspoon vanilla
  • 1 cup whipping cream
  • 2 tablespoons cocoa
  • 1 tablespoon granulated sugar
  • 12 teaspoon vanilla
  • 2 tablespoons grated chocolate

Method

  • For the meringue crust, beat egg whites, salt and cream of tartar until a it forms a stiff froth.
  • Add the sugar gradually, until the mixture is very stiff and the sugar is dissolved.
  • Fold in wafer crumbs, pecans and vanilla.
  • Spread in a greased 9 inch pie plate pressing the mixture up the sides slightly to form a shell.
  • Bake in 325F oven about 35 minutes until dry.
  • Cool.
  • To make the filling you beat the whipping cream, cocoa, sugar and vanilla in a small bowl until stiff.
  • Spread over pie.
  • For a garnish sprinkle with grated chocolate.
