Ingredients
- 1 3/4 lb. fresh plum tomatoes (about 12 - 14 tomatoes)
- 2 Tbsp. minced garlic
- 1 c. coarsely chopped fresh basil
- 1 tsp. balsamic vinegar
- 1/3 c. olive oil
- salt & coarsely ground pepper to taste
- 8 slices peasant bread
- 1 garlic clove, cut in half
- 1/4 c. olive oil
Method
- Chop the tomatoes into 1/4 inch pieces.
- Toss with 2 Tbsp. garlic in a bowl.
- Add the basil, vinegar, 1/3 c. olive oil, salt and pepper and mix well.
- Let stand at room temperature for at least 15 minutes.
- Rub bread with the cut side of the garlic halves and brush bread with 1/4 c. olive oil.
- Place on grill rack.
- Grill for 5 to 8 minutes or until toasted.
- Arrange the bread on a serving plate and top with the tomato mixture.
- Serve immediately.
