Ingredients

  • 1 3/4 lb. fresh plum tomatoes (about 12 - 14 tomatoes)
  • 2 Tbsp. minced garlic
  • 1 c. coarsely chopped fresh basil
  • 1 tsp. balsamic vinegar
  • 1/3 c. olive oil
  • salt & coarsely ground pepper to taste
  • 8 slices peasant bread
  • 1 garlic clove, cut in half
  • 1/4 c. olive oil

Method

  • Chop the tomatoes into 1/4 inch pieces.
  • Toss with 2 Tbsp. garlic in a bowl.
  • Add the basil, vinegar, 1/3 c. olive oil, salt and pepper and mix well.
  • Let stand at room temperature for at least 15 minutes.
  • Rub bread with the cut side of the garlic halves and brush bread with 1/4 c. olive oil.
  • Place on grill rack.
  • Grill for 5 to 8 minutes or until toasted.
  • Arrange the bread on a serving plate and top with the tomato mixture.
  • Serve immediately.
