Ingredients

  • 3 large eggs
  • 3 large egg yolks
  • pinch of salt
  • 3/4 cup of sugar
  • 1/3 cup cake flour
  • 1/3 cup corn starch
  • 1/4 cup dutch processed cocoa

Method

  • Preheat oven to 400. Butter a 10x15 jelly roll pan and line it with buttered parchment.
  • Whisk together eggs, sugar, yolks and salt. Set over simmering water until just lukewarm (100 degrees). Move to mixer and whip until cool and tripled in volume.
  • Stir flour, corn starch and cocoa together. Sift 1/3 of the mixture over the eggs and fold in. Repeat with remaining thirds. Spread batter gently into pan and bake for 10 - 12 minutes until just firm. DO NOT OVERCOOK!
