Ingredients

  • 1 3/4 pounds cod diced, large dice cut
  • 2 garlic cloves
  • 1 lime juice
  • 1 teaspoon fresh ginger grated
  • turmeric
  • 2 teaspoons of colombo powder
  • 2 sweet potatoes big or 3 small
  • 1 tomato cut in small cubes
  • 1 plantain sliced
  • salt
  • ground black pepper
  • olive oil

Method

  • Put the fish in a baking pan with crushed garlic, lime juice, ginger, a pinch of turmeric, and a teaspoon of colombo powder. Drizzle with a little olive oil, stir, and place in refrigerator to marinate.
  • Meanwhile, peel and cut the sweet potatoes into large cubes. In a large skillet, brown the potatoes in a little bit of olive oil. Once browned, add the tomato, the remaining teaspoon of colombo, and fill halfway with water. Cook on low heat for about 15 minutes. Add the sliced plantain, fish, and its marinade. Cook 5 to 10 minutes more. To test for doneness, prick plantain slices with a knife, they should be tender. Add salt and pepper.
