Ingredients
- 2 eggs, beaten
- bunch of green onions
- 1 lb. bacon
- 1 c. Cheddar cheese
- 1 c. Swiss cheese
- 8 oz. sour cream
- 3 lb. fresh squash
Method
- Brown bacon; saute green onion.
- Cook squash with salt, pepper and seasoned salt to taste.
- Beat eggs and mix with sour cream. Add bacon and squash to mixture.
- Grease large casserole dish. Pour one-half mixture in bottom of dish, add one-half of both cheeses.
- Add remaining mixture and top with remaining cheese. Bake at 350° for 30 minutes.
