Ingredients

  • 1 lb. carrots, sliced
  • 2 eggs
  • 1/2 c. chopped onion
  • 1 c. chopped celery
  • 1 Tbsp. chopped fresh parsley
  • 3/4 c. butter or oleo, melted
  • 1 tsp. salt
  • 8 c. cubed day old bread

Method

  • In a saucepan cover carrots with water and cook until very tender.
  • Drain and mash.
  • In a large bowl beat eggs; add onion, celery, parsley, butter and salt.
  • Stir in carrots, add bread cubes and mix well.
  • Pour into
  • greased 2-quart baking dish.
  • Bake uncovered at 350° for 30 to 40 minutes or until set.
  • Makes 8 to 10 servings.
