Ingredients
- 1 lb. carrots, sliced
- 2 eggs
- 1/2 c. chopped onion
- 1 c. chopped celery
- 1 Tbsp. chopped fresh parsley
- 3/4 c. butter or oleo, melted
- 1 tsp. salt
- 8 c. cubed day old bread
Method
- In a saucepan cover carrots with water and cook until very tender.
- Drain and mash.
- In a large bowl beat eggs; add onion, celery, parsley, butter and salt.
- Stir in carrots, add bread cubes and mix well.
- Pour into
- greased 2-quart baking dish.
- Bake uncovered at 350° for 30 to 40 minutes or until set.
- Makes 8 to 10 servings.
