Ingredients
- 6 Large Sweet Potatoes, peeled and sliced 1/2-inch thick
- 6 Ripe Pears, peeled, cored and cut into 8 wedges each
- 1/3 cup Pear Brandy (may substitute coconut brandy or other brandy)
- 1/2 cup Orange Juice
- 3/4 cup Packed Brown Sugar
- 4 Tbsp. (1/2 stick) Unsalted Butter
- 1/2 cup Golden Raisins
Method
- 1. Place the sweet potato slices tin a pot and add water to cover.
- Heat to boiling.
