- 1 c. self-rising cornmeal
- 1/4 tsp. salt
- 1 1/2 c. (6 oz.) shredded Cheddar cheese
- 1/2 c. chopped onion
- 1 c. milk
- 3 Tbsp. bacon drippings
- 1 tsp. garlic powder
- 3 eggs, beaten
- 1 (7 oz.) can whole kernel corn, drained
- 1 (2 oz.) jar diced pimento, drained
Method
- Combine
- cornmeal and salt;
- add remaining ingredients, stir just
- until dry ingredients are moistened. Spoon into a greased 10-inch iron skillet.
- Bake at 350° for 45 minutes or golden brown.
