- 2 tsp oil
- 14 oz boneless skinless chicken breasts
- 2 None prepared pizza crusts (9 inches each)
- 1/2 cup bottled tomato pasta sauce
- 1/2 cup pitted black olives
- 7 oz mini mozzarella balls, sliced thinly
- 9 oz cherry tomatoes, halved
- 2 tbsp basil pesto
- 1/2 cup fresh basil leaves
Method
- Preheat the oven to 450°F.
- Heat oil in a large skillet on medium heat. Cook the chicken until cooked through. Remove from the pan. Let stand, loosely covered with foil, 5 mins.
- Meanwhile, place the pizza crusts on baking pans. Spread the pasta sauce. Thinly slice chicken. Top pizzas with the chicken, olives, cheese and cherry tomatoes.
- Bake for about 15 mins or until the crusts are crisp. Drizzle with the pesto then sprinkle with basil.
