Ingredients
- 6 medium sweet potatoes, well washed and tips cut off
- 6 Tbsp. butter
- 3/4 c. brown sugar
- 1/2 tsp. grated lemon rind
- 1/8 tsp. ground ginger
Method
- Boil sweet potatoes until tender; drain.
- Peel and cut potatoes lengthwise into 1/2-inch slices.
- Melt butter and sugar over medium heat.
- Add lemon rind and ginger.
- Put potatoes in a shallow, well buttered baking pan. Pour butter-sugar mixture on top.
- Bake, uncovered, for 20 minutes, or until glazed.
- Serves 6 to 8.
