Ingredients

  • 1 tablespoon vegetable oil
  • 12 medium onion, grated
  • 2 cups chicken broth or 2 cups vegetable broth
  • 1 cup couscous
  • 2 medium green bell peppers, diced
  • 12 cup fresh corn kernels
  • 1 medium cucumber, seeded and diced
  • 2 tablespoons of fresh mint, minced
  • 2 tablespoons fresh basil, minced
  • 14 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • salt and pepper

Method

  • Bring 1 tablespoon oil, onion, broth, and couscous to a boil over high heat.
  • Cover with a lid and turn heat to low.
  • Simmer for 20 minutes or until couscous is tender.
  • Remove from heat and let stand for 10 minutes.
  • Mix together remaining ingredients in large bowl.
  • Stir in cooked couscous.
  • Serve hot or chilled.
