- 1 tablespoon vegetable oil
- 12 medium onion, grated
- 2 cups chicken broth or 2 cups vegetable broth
- 1 cup couscous
- 2 medium green bell peppers, diced
- 12 cup fresh corn kernels
- 1 medium cucumber, seeded and diced
- 2 tablespoons of fresh mint, minced
- 2 tablespoons fresh basil, minced
- 14 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- salt and pepper
Method
- Bring 1 tablespoon oil, onion, broth, and couscous to a boil over high heat.
- Cover with a lid and turn heat to low.
- Simmer for 20 minutes or until couscous is tender.
- Remove from heat and let stand for 10 minutes.
- Mix together remaining ingredients in large bowl.
- Stir in cooked couscous.
- Serve hot or chilled.
