Ingredients

  • 12 cup raw fresh cranberries
  • 1 small apple, peeled cored and chopped in small pieces
  • 14 cup currants
  • 12 cup orange juice
  • 1 12 tablespoons honey
  • 1 tablespoon melted butter
  • 1 pinch salt
  • 2 acorn squash, cut in half and seeds removed

Method

  • Heat oven to 350.
  • Combine cranberries, apples, currants, orange juice, honey, butter and salt in a saucepan.
  • Heat until the berries are just tender.
  • Place squash in an ovenproof dish.
  • Fill cavities with fruit.
  • Cover and bake until squash is tender, about 35-45 minutes.
