- 2 c. all-purpose flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 c. butter or margarine
- 1 egg
- 1 Tbsp. grated orange rind
- 3/4 c. orange juice
- 1 1/2 c. golden raisins, chopped
- 1 1/2 c. cranberries
- 1 c. chopped walnuts or pecans
Method
- Preheat oven to 350°.
- Sift together the flour, sugar, baking powder, baking soda and salt into large bowl.
- Cut in butter or margarine until mixture is crumbly.
- Stir egg with orange rind and orange juice, then blend mixture into flour mixture.
- Stir just until flour is moistened.
- Fold in raisins, cranberries and nuts. Spoon into greased 9 1/2 x 5 1/4-inch loaf pan.
- Bake at 350° for 60 to 70 minutes, or until tester inserted into center comes out clean.
- Cool in pan 5 minutes, then invert onto wire rack.
- Turn right side up.
- Cool.
- Wrap for 24 hours before serving.
