Ingredients

  • 2 c. all-purpose flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. butter or margarine
  • 1 egg
  • 1 Tbsp. grated orange rind
  • 3/4 c. orange juice
  • 1 1/2 c. golden raisins, chopped
  • 1 1/2 c. cranberries
  • 1 c. chopped walnuts or pecans

Method

  • Preheat oven to 350°.
  • Sift together the flour, sugar, baking powder, baking soda and salt into large bowl.
  • Cut in butter or margarine until mixture is crumbly.
  • Stir egg with orange rind and orange juice, then blend mixture into flour mixture.
  • Stir just until flour is moistened.
  • Fold in raisins, cranberries and nuts. Spoon into greased 9 1/2 x 5 1/4-inch loaf pan.
  • Bake at 350° for 60 to 70 minutes, or until tester inserted into center comes out clean.
  • Cool in pan 5 minutes, then invert onto wire rack.
  • Turn right side up.
  • Cool.
  • Wrap for 24 hours before serving.
