Ingredients
- 2 pkg. cream cheese, softened (8 oz. each)
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla
- vanilla wafers
Method
- Beat cheese until creamy; add sugar and beat until fluffy. Add eggs one at a time.
- Stir in vanilla.
- Place a vanilla wafer in paper lined muffin pan.
- Pour cheese over wafer, filling cups full.
- Bake at 350° for 20 minutes.
- These are best if left in pans and refrigerated overnight.
- Top with fresh fruit or leave plain.
