Ingredients
- 1 large onion
- 4 large carrots, sliced
- 1 celery stalk with leaves
- 2 large peeled and diced potatoes
- 2 sprigs fresh chopped parsley
- 5 c. chicken stock or canned broth
- 1 c. cream
- salt and pepper
Method
- Saute in butter onion, carrots and celery stalk with leaves. Saute 15 minutes.
- Add potatoes and parsley.
- Stir and cook 1 minute.
- Add chicken stock or canned broth, cream, salt and pepper.
- When potatoes are done, puree.
- Serve hot or cold.
