Ingredients

  • 1 envelope Lipton vegetable recipe soup mix
  • 4 c. hot mashed potatoes (do not use salt in mashed potatoes)
  • 1 c. shredded Cheddar cheese (about 4 oz.)
  • 1/2 c. chopped green onions
  • 1 egg, slightly beaten
  • 1/8 tsp. pepper

Method

  • Preheat oven to 375°.
  • In lightly greased 1 1/2-quart casserole dish, thoroughly combine all ingredients, except 1/4 cup cheese.
  • Bake for 40 minutes, top with remaining cheese and bake an additional 5 minutes, or until cheese is melted.
  • Makes 8 servings.
