Ingredients

  • 1 1/4 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 4 Tbsp. sugar
  • 1 1/4 c. corn meal
  • 3 eggs, beaten
  • 3/4 c. milk
  • 1 c. water
  • 1/2 c. oil
  • 1 1/2 tsp. butter
  • 1/2 c. bell pepper, chopped
  • 1 Tbsp. hot pepper, chopped
  • 2 Tbsp. onion, grated
  • 1 small jar pimiento, chopped
  • 2 c. grated Cheddar cheese

Method

  • Sift flour, baking powder, salt, sugar and corn meal together. Combine eggs and milk and add to dry ingredients, stirring only enough to moisten.
  • Add oil, butter, peppers, onion, pimiento and cheese.
  • Combine, stirring only enough to moisten.
  • Do not overstir.
  • Place in greased muffin tins. Bake at 400° for 20 to 25 minutes.
  • Makes 3 1/2 to 4 dozen.
