Ingredients

  • 1 can (14-1/2 oz.) vegetable broth
  • 1 medium red onion, chopped
  • 1/2 cup sliced dried apricots
  • 1 Tbsp. olive oil
  • 1 pkg. (10 oz.) couscous
  • 1 pkg. (2.25 oz.) PLANTERS Sliced Almonds, toasted
  • 2 Tbsp. chopped fresh mint leaves

Method

  • Combine broth, onions, apricots and oil in medium saucepan.
  • Bring to boil on medium-high heat.
  • Stir in couscous; cover.
  • Remove from heat; let stand 5 min.
  • Fluff couscous with fork.
  • Add almonds and mint; mix lightly.
