Ingredients

  • 1 pkg. dates
  • 2 c. water
  • 1 tsp. vanilla
  • 1 1/2 c. whole wheat flour
  • 1 1/2 c. oatmeal
  • 1/4 c. chopped walnuts
  • 1/4 tsp. salt
  • 1 Tbsp. baking powder
  • 1 egg
  • 1/4 c. water
  • 2/3 c. oil

Method

  • Cook the dates and water; cool slightly, then add the vanilla. Set this mixture aside.
  • Mix together the next 6 ingredients. Add the water and oil to dry ingredients.
  • Use a little more than half on the bottom of a lightly greased 9 x 13-inch pan.
  • Cover with dates.
  • Spread the remainder on top.
  • Bake at 375° for 25 minutes.
