Ingredients

  • 2 Tbs. Butter
  • 2 Tbs. Brown Sugar
  • 1 Tsp. Cinnamon
  • 1/8 tsp. Cloves (if desired)
  • 2 large tart apples, sliced thin
  • Pam
  • 2/3 C. Flour
  • 2/3 C. Milk
  • 2 large eggs

Method

  • Preheat the oven to 425
  • In a cast iron skillet, melt the butter. Add the brown sugar & cimmamon, and stir till it begins to bubble. Add apple slices and cook for 2 minutes.
  • Put skillet into oven while preparing the egg mixture (about 5 minutes).
  • Use a blender, food processor, or whisk to beat milk and eggs. Add flour, and mix just until blended.
  • Remove the skillet from the oven, and spray PAM around edges of pan.
  • Pour egg mixture over the top of the apples.
  • Return to oven and bake for 15 minutes.
  • It should puff up, and turn a nice golden brown. Let it set for a few minutes before cutting and serving.
