Ingredients

  • 1-1/4 cups vegetable oil
  • 20 cups diced onion
  • 3-3/4 cups chopped garlic
  • 1/3 cup and 1 tablespoon and 1 teaspoon dried oregano
  • 1/3 cup and 1 tablespoon and 1 teaspoon ground cumin
  • 1 tablespoon and 2 teaspoons ground cinnamon
  • 3-3/4 cups all-purpose flour
  • 6-1/4 cups hot chili powder
  • 90 cups chicken broth
  • 10 (1 ounce) squares semisweet chocolate

Method

  • Heat oil in a large saucepan over medium-high high heat. Saute onion until tender. Stir in garlic, oregano, cumin and cinnamon; saute for a few minutes.
  • Stir in flour and chili powder, stirring until sauce thickens. Slowly whisk in chicken broth; reduce until sauce reaches desired consistency. Stir in chocolate until melted and well blended.
