Ingredients

  • 3 Tbsp. olive oil
  • 1 1/2 c. cooked broccoli or any leftover vegetables
  • 1/3 lb. mushrooms, sliced
  • 1 clove garlic, minced
  • 1/2 bell pepper, diced
  • 1/2 lb. leftover meat, cubed (chicken, turkey, ham, beef)
  • 6 eggs, beaten
  • 1/2 tsp. pepper
  • salt to taste
  • 1 1/2 c. shredded cheese (Cheddar, Swiss any kind)
  • 1/4 c. freshly grated Parmesan cheese

Method

  • Heat oil in large frying pan or Dutch oven.
  • Add vegetables, mushrooms, garlic and bell pepper.
  • Stir, cover and cook for 3 minutes.
  • In a bowl, combine meat, eggs, salt and pepper and cheese.
  • Stir into the vegetable mixture.
  • Pour into a 3-quart casserole dish and bake for 20 minutes at 350°.
  • Top with Parmesan cheese and bake for 5 minutes longer.
  • Yield: 4 to 5 servings.
