Ingredients

  • 2 lb. baking potatoes (in jackets)
  • 1 c. sifted flour
  • 1 whole egg (1 extra egg yolk)
  • 2 Tbsp. soft butter
  • 1 tsp. salt
  • Parmesan cheese

Method

  • Boil potatoes.
  • Peel and mash while warm and blend with flour.
  • Add slightly beaten egg, yolk, butter and salt.
  • Place on board and knead lightly.
  • Keep dough soft.
  • Roll into sticks 1-inch thick and about 10-inches long.
  • Cut into 3/4-inch pieces. Dent in the middle with a fork.
  • Boil in salted water.
  • Cook until they rise to the top of the water.
  • Drain.
