Ingredients
- 2 lb. baking potatoes (in jackets)
- 1 c. sifted flour
- 1 whole egg (1 extra egg yolk)
- 2 Tbsp. soft butter
- 1 tsp. salt
- Parmesan cheese
Method
- Boil potatoes.
- Peel and mash while warm and blend with flour.
- Add slightly beaten egg, yolk, butter and salt.
- Place on board and knead lightly.
- Keep dough soft.
- Roll into sticks 1-inch thick and about 10-inches long.
- Cut into 3/4-inch pieces. Dent in the middle with a fork.
- Boil in salted water.
- Cook until they rise to the top of the water.
- Drain.
