Ingredients
- 2 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 1 c. firmly packed brown sugar
- 1/2 c. shortening
- 2 eggs
- 1 tsp. soda
- 1/2 c. buttermilk
- 2 c. fresh or frozen blueberries
Method
- Combine flour and salt; set aside.
- Cream sugar and shortening; add eggs, one at a time, beating well after each addition.
- Combine buttermilk and soda, stirring well.
- Add to sugar mixture alternately with flour mixture, stirring just to combine.
- Fold in berries.
- Spoon batter in greased muffin tins, filling 2/3 full.
- Bake at 350° for 20 to 25 minutes or until golden brown.
