Ingredients

  • 2 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 c. firmly packed brown sugar
  • 1/2 c. shortening
  • 2 eggs
  • 1 tsp. soda
  • 1/2 c. buttermilk
  • 2 c. fresh or frozen blueberries

Method

  • Combine flour and salt; set aside.
  • Cream sugar and shortening; add eggs, one at a time, beating well after each addition.
  • Combine buttermilk and soda, stirring well.
  • Add to sugar mixture alternately with flour mixture, stirring just to combine.
  • Fold in berries.
  • Spoon batter in greased muffin tins, filling 2/3 full.
  • Bake at 350° for 20 to 25 minutes or until golden brown.
