Ingredients
- 1 1/2 c. raw rice
- 2 Tbsp. finely chopped onions
- 1/4 c. minced garlic
- 3 Tbsp. butter
- 1/2 c. chopped parsley
- 1 c. milk
- 1 tsp. salt
- 1 tsp. Worcestershire
- 1 c. grated Cheddar cheese
- 2 eggs, slightly beaten
Method
- Cook the rice.
- To cook rice:
- 2 cups raw rice, 5 1/3 cups cold water, 1 1/3 teaspoons salt and 1 tablespoon butter.
- Place all in a large saucepan.
- Cover and bring to a boil over high heat, then turn to low heat and cook, covered, for 25 minutes. Turn off heat and let stand covered 10 minutes.
- Serves 10 and makes large ring mold.
- Saute onion and garlic in butter.
- Combine rice and parsley in bowl.
- Add milk, salt, Worcestershire, cheese and egg, then the onion and garlic.
- Mix thoroughly.
- Pour into baking dish.
- Bake at 350° for about 40 minutes.
- Serves 6.
