Ingredients

  • 1 1/2 c. raw rice
  • 2 Tbsp. finely chopped onions
  • 1/4 c. minced garlic
  • 3 Tbsp. butter
  • 1/2 c. chopped parsley
  • 1 c. milk
  • 1 tsp. salt
  • 1 tsp. Worcestershire
  • 1 c. grated Cheddar cheese
  • 2 eggs, slightly beaten

Method

  • Cook the rice.
  • To cook rice:
  • 2 cups raw rice, 5 1/3 cups cold water, 1 1/3 teaspoons salt and 1 tablespoon butter.
  • Place all in a large saucepan.
  • Cover and bring to a boil over high heat, then turn to low heat and cook, covered, for 25 minutes. Turn off heat and let stand covered 10 minutes.
  • Serves 10 and makes large ring mold.
  • Saute onion and garlic in butter.
  • Combine rice and parsley in bowl.
  • Add milk, salt, Worcestershire, cheese and egg, then the onion and garlic.
  • Mix thoroughly.
  • Pour into baking dish.
  • Bake at 350° for about 40 minutes.
  • Serves 6.
