Ingredients

  • 3 whole Green Tomatoes
  • 1 teaspoon Granulated Sugar
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Cracked Black Pepper
  • 1/2 teaspoons Cajun Seasoning (i.e. Slap Ya Mama)
  • 1 cup Marinara Sauce
  • 1 whole Sliced Sweet Onion (i.e. Vidalia)
  • 1/2 cups Shredded Hot Pepper Cheese
  • 1 whole Sleeve Of Ritz Crackers, Crushed (The Standard Size Sleeve, From A 15 Oz. Box)
  • 1 cup Shredded Cheese (Sharp Or Italian Blend)

Method

  • 1.
  • Preheat oven to 400 F. Grease an 8x10 rectangular pan and set it aside.
  • 2.
  • Slice green tomatoes into 1/4 slices.
  • Layer them into the greased pan (overlapping slightly is okay.)
  • Combine the seasonings (sugar, salt, pepper and Cajun) in a small bowl then sprinkle the top of the tomatoes with half of the spices.

  • Spread half of the marinara sauce on top of the tomatoes.
  • Just spoon a little on each tomato.
  • Layer all of the sliced onion next.
  • Cover with all of the shredded hot pepper cheese.
  • 4.
  • Layer the remaining tomato slices on top of that and then sprinkle the top with remaining seasoning.
  • Top with the remaining marinara sauce.
  • Spread the crushed crackers over the sauce and top with 1 cup of shredded cheese of your choice.
  • I like to use a combination of sharp cheddar and an Italian blend.
  • 5.
  • Cover with foil.
  • Bake for 30 minutes.
  • Remove foil and continue baking for 15 additional minutes.
  • Cool for 5 minutes and serve.
  • Cooks Notes: Double recipe for a 9 x 13 pan.
