Ingredients

  • 6 hard-boiled eggs, chopped finely
  • 1/2 lb. ham, chopped finely
  • 3 Tbsp. margarine
  • 2/3 c. flour
  • 1 1/4 c. milk
  • 1/2 lb. cheese, grated
  • 2 tsp. parsley
  • breadcrumbs
  • shortening (for deep frying)

Method

  • Mix eggs and ham.
  • Melt margarine in saucepan.
  • Stir in flour and mix well.
  • Slowly stir in milk.
  • Stirring constantly, bring to a boil.
  • Season with salt and pepper.
  • Add cheese, parsley and egg and ham mixture.
  • Blend well.
  • Cool.
  • When mixture is cold, shape into croquettes.
  • Dip in beaten eggs and roll in breadcrumbs.
  • Fry in deep fat until golden brown.
