Ingredients
- 6 hard-boiled eggs, chopped finely
- 1/2 lb. ham, chopped finely
- 3 Tbsp. margarine
- 2/3 c. flour
- 1 1/4 c. milk
- 1/2 lb. cheese, grated
- 2 tsp. parsley
- breadcrumbs
- shortening (for deep frying)
Method
- Mix eggs and ham.
- Melt margarine in saucepan.
- Stir in flour and mix well.
- Slowly stir in milk.
- Stirring constantly, bring to a boil.
- Season with salt and pepper.
- Add cheese, parsley and egg and ham mixture.
- Blend well.
- Cool.
- When mixture is cold, shape into croquettes.
- Dip in beaten eggs and roll in breadcrumbs.
- Fry in deep fat until golden brown.
