Ingredients

  • 3 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 c. Wesson oil
  • 2 eggs, well beaten
  • 8 oz. crushed pineapple
  • 2 bananas, chopped
  • 1 small pkg. pecans
  • 1 lb. confectioners sugar
  • 8 oz. cream cheese
  • 3/4 c. margarine
  • 1 tsp. vanilla

Method

  • Do not use mixer.
  • Combine flour, sugar, soda, salt and cinnamon.
  • Mix well.
  • Add Wesson oil and eggs.
  • Mix well.
  • Add pineapple and juice from pineapple, bananas and pecans.
  • Mix well and pour into 3 cake pans that are sprayed well with Pam.
  • Bake at 350° for 30 to 35 minutes.
  • Cool completely before icing.
