Ingredients

  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/2 c. vegetable oil
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 1 c. walnuts, chopped
  • 2 c. bananas, chopped
  • 2 (8 oz.) pkg. cream cheese
  • 1 c. softened butter
  • 2 (16 oz.) boxes confectioners sugar
  • 2 tsp. vanilla
  • 2 c. sugar
  • 1 tsp. baking soda
  • 3 eggs, beaten
  • 1 1/2 tsp. vanilla

Method

  • Preheat oven to 350°.
  • Combine dry ingredients.
  • Add eggs and oil.
  • Do not beat.
  • Stir in vanilla, fruit and 1 cup nuts.
  • Spoon into 3 well-greased pans.
  • Bake 25 to 30 minutes and cool in pans 10 minutes.
  • Combine cream cheese and butter.
  • Beat until smooth. Add sugar and beat until fluffy.
  • Stir in vanilla.
  • When cool, frost and sprinkle with remaining nuts.
