- 3 c. flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 c. vegetable oil
- 1 (8 oz.) can crushed pineapple (undrained)
- 1 c. walnuts, chopped
- 2 c. bananas, chopped
- 2 (8 oz.) pkg. cream cheese
- 1 c. softened butter
- 2 (16 oz.) boxes confectioners sugar
- 2 tsp. vanilla
- 2 c. sugar
- 1 tsp. baking soda
- 3 eggs, beaten
- 1 1/2 tsp. vanilla
Method
- Preheat oven to 350°.
- Combine dry ingredients.
- Add eggs and oil.
- Do not beat.
- Stir in vanilla, fruit and 1 cup nuts.
- Spoon into 3 well-greased pans.
- Bake 25 to 30 minutes and cool in pans 10 minutes.
- Combine cream cheese and butter.
- Beat until smooth. Add sugar and beat until fluffy.
- Stir in vanilla.
- When cool, frost and sprinkle with remaining nuts.
