Ingredients
- 1 (No. 2) can crushed pineapple, drained (save juice)
- 1 small pkg. lemon Jell-O
- 1/2 c. sugar
- 2 Tbsp. lemon juice
- 1 c. grated carrots
- 1 c. nuts
- 1/2 c. whipped cream or 1 carton Cool Whip
Method
- Add enough water to pineapple juice to make 1 1/2 cups.
- Boil this liquid, then take from heat and dissolve Jell-O into it.
- Add sugar and lemon juice.
- Place in fridge until slightly thickened. Add pineapple, carrots and nuts and fold in whipped cream or Cool Whip.
