Ingredients

  • 1 (No. 2) can crushed pineapple, drained (save juice)
  • 1 small pkg. lemon Jell-O
  • 1/2 c. sugar
  • 2 Tbsp. lemon juice
  • 1 c. grated carrots
  • 1 c. nuts
  • 1/2 c. whipped cream or 1 carton Cool Whip

Method

  • Add enough water to pineapple juice to make 1 1/2 cups.
  • Boil this liquid, then take from heat and dissolve Jell-O into it.
  • Add sugar and lemon juice.
  • Place in fridge until slightly thickened. Add pineapple, carrots and nuts and fold in whipped cream or Cool Whip.
