- 2/3 lb pizza base
- 1/4 cup tomato puree
- 8.75 oz ground lamb
- 1/2 cup breadcrumbs
- 1 clove garlic, minced
- 1 tbsp fresh basil, chopped + small leaves, to serve
- 3.5 oz feta cheese, crumbled
- 3.5 oz cherry tomatoes, halved
- 1.5 oz mozzarella cheese, grated
- None None lemon wedges, to serve
Method
- Preheat oven to 400°F. Line a baking tray with parchment paper.
- Place pizza base on prepared tray. Spread tomato puree over top. Combine ground lamb, breadcrumbs, garlic, basil and 1/2 the feta. Season then sprinkle over pizza base. Top with tomatoes and mozzarella. Bake for 20 mins, or until pizza is golden and base is crisp.
- Sprinkle with remaining feta and reserved basil leaves. Serve with lemon wedges.
